Organic Guatemala: Quetzaltenango FTO Honey

This lot of Fair-trade Organic Guatemala caught our attention in particular for two reasons, it’s honey processed which is rare for Guatemala and how distinct of a flavor it has. This co-op processes a small amount of coffee each year this way and after tasting it, I wish they did more. We kept it on the lighter side to bring out as much of the flavor that honey process brings to the table as we could. It’s gentle and sweet with the flavor of chocolate covered grapes, but not too delicate to drink as an espresso if you want something a bit different.
